Defining your voice
As many of you will have noticed by now I’m a Dyslexic. I excel at typo’s with crackers like Lion instead of Loin. To survive you develop coping mechanisms and find support. I couldn’t attempt this without spell check.
To be able to keep going you need to adapt and use what you can. The important thing in my book is honesty. This means for me that I try my best but in the end idiosyncrasies and imperfections define my voice.
Cookie has gone through a similar process. We do the same with food. A funny shaped carrot, or the blemished skin of a tasty apple should not mean it is discarded, the off cuts get used up.
We have learnt to become restaurateurs over time. Lots of ideas have come and gone but the basic principals of what we started Cookie for are there for everyone to see. Yes sometimes we have been confusing, sometimes we have been inconsistent, sometimes we have had the wrong staff but I don’t thing we have ever missed heart and a willingness to improve.
Its an open kitchen with seasonal cooking, a fusion of Scottish and Italian food traditions. We are a place where you can eat with your family good food with a sense of how it was made and where it came from.
We are getting there in term of defining our voice.
You can eat well for under a tenner, you will find hearty plates at mid range prices and something exceptional and out of the ordinary to make eating a special occasion too.
We like to say everything has a story to it. The same with our staff who have something to say and understand our voice. We have a lovely team of people who are seen as family.
Our family extends to Alessandro with whom we have made A great red wine and are about to bring you a white. It includes Claudio’s pigs and for that matter tender Lion from Kettle Hill in Milngavie.
Lunch now from £4.20 and dinner from £7.95 Two courses lunch and pre theatre £11.50
